A good salad can be enjoyed during winter time too! Try this recipe with seasonal winter vegetables which will bring comfort & flavour to your table!
Warming Winter Salad Recipe
Preparation time: 10-15 min
Serves: 2-4
Ingredients:
- Butternut squash – 1 whole
- Red pepper- 1
- Spinach – handful
- Pumpkin seeds
- Pomegranate seeds
- Walnuts
- Pickled Ginger
- Drizzle of Extra virgin olive oil
- Salt
- 7 Spice Extract- 1/4th teaspoon
- Ginger Extract (optional) – 1/8th teaspoon
Method:
- Cut the butternut squash into cubes, spray them with extra virgin olive oil. Put them in baking tray and roast them in the oven or air fryer until they are cooked.
- Cut the red pepper into thin slices.
- Toss all the ingredients together and along with 7 Spice extract and if you like it fiery, add a little bit ginger extract on the top and enjoy!
